I am so excited for this lovely young couple making Food for Lovers vegan queso out of Round Rock, Texas.
They were offering samples at Whole Foods downtown today.
Normally I go to the store with a list and I’m on a mission for a particular item, but somehow my eye caught hold of the vegan queso on the jar labeling.
Yes…of course I couldn’t help myself to a beautiful corn chip glistening with nachoey looking cheesiness..
I darted to the nutritional make up…blessed be…I can eat the whole jar for almost 200 calories….and I could use my Ezekiel corn tortillas for chips. hallelujah….we might have a match here….
I was so excited to get into the kitchen tonight and use the queso…corn tortillas were baked in the new cast iron skillet til they became as hard as a tostada shell.
Homemade refried black beans were pulsed til smoothe….and this was the tostada base…
For hubby he got smoked chicken too…then the vegan queso went on along with shredded organic carrots and organic hothouse tomato. Topped with some spicy tamari pumpkin seeds.
Hubby said it was fantastic! Mine was too! thanks to this wonderful couple making vegan queso!
