Sunday morning I wrapped up this 'parfait' for a good friend of mine -- grilled peaches, drizzled in syrup, topped with cashews, pecans, and cashew cream. (Plus, there's a 'bumblebee bar' crumbled in there.)

Sunday morning I wrapped up this ‘parfait’ for a good friend of mine — grilled peaches, drizzled in the peach syrup, topped with cashews, pecans, and cashew cream. (Plus, there’s a ‘Bumble Bar‘ crumbled in there.)

The 'Bumble Bar' is gluten-free -- has organic sesame seeds, organic flax seeds, organic cashews, organic extract of vanilla, and organic cinnamon. (Honestly, I bought the store off the shelf cause I didn't trust myself with 24 freshly baked oatmeal cookies. ha!)

It started with these beautiful babies. I dashed on some cinnamon and real vanilla bean before grilling.

The peaches cook on both sides until the syrup starts appearing on the surfaces. (The fire was probably a little too hot, but the scorched skin comes off for the parfait.)

Off the grill the peaches go into a mixing bowl and covered to 'sweat.' After about an hour the skins easily come off. (By the time the last peach is peeled, there's a yummy syrup at the bottom of the bowl, which gets reserved for the parfait.)
