Reflecting on DAY TWO of ‘doing the right thing’ food-wise.
Breakfast started out with eggs and salsa — plus the hearty health bread with almond butter.
(We love it and have to keep ourselves from more than 2 tablespoons per day.)
Made the Green Lentil and Coconut Curry dish you see in picture above.
(All the Indian spices made the house so warm on such a drizzly rain-filled day.
And it made such a huge amount I was kinda eating off of it for lunch and dinner.
Adding the 1/2 cup brown rice made me feel not so yearning for the beer bread from the KOLACHE shop in West, TX — HA!)
I’m not as wobbly as I was on DAY ONE.
And not as annoyed as the heavier cravings are subsiding.
I’m looking forward to my Kale Salad with avacado and purple onion.
