Feeling lots of gratitude today that I am able to plan out this kitchen remodel — whilst eating pretty healthy. (Thank you to Whole Foods, Wheatsville Co-op and JB Johnson Farms.)

I guess I wanted to show the picture above because my mom commented that she was getting tired of her dressing and liked what I was doing — which is: I use Oka’s miso dressing (a tablespoon) and all the juice from half of a real lemon (and a tablespoon of salsa for spice.)

Take a tablespoon of Oka's dressing and add squeeze of lemon and salsa and you'll have good coverage :)

Take a tablespoon of Oka’s Miso dressing and juice from half a large lemon — and 1 tablespoon salsa — and you’ll have good coverage 🙂 (BTW…I find Oka’s in the refrigerated dressings section at Whole Foods — downtown on Lamar.)

I also use soup, which I learned a lot of people do, according to the checkout woman at Whole Foods. She saw mine and said she loves seeing people use their imagination. Hmmm.

Let’s see…ingredients: Organic jewel yams, tomato juice, vegetable stock, organic peanut butter, yellow onions, organic carrots, non-GMO certified canola oil, fresh ginger, organic raw sugar, cayenne.

Peanut butter makes everything taste good. I guess I’m also grateful today that I don’t have a peanut allergy. Hmmmm….
